Back in December I attended a pizza and panino dinner at Trasca & Co Eatery. We ate our way through eight courses of family recipes and surprising combinations. And I’m still having visions of spaghetti panino dancing in my head.
The Frasca family has been creating delicious cheesy goodness since 1974 when Grandma Evey Frasca invented the panino. Sara Frasca, the owner and operator of Trasca & Co Eatery, grew up in her family’s restaurants learning the trade of making perfectly golden pizzas and perfecting her grandmother’s panino recipe. In 2015, she opened up Trasca & Co Eatery in Ponte Vedra which boasts fresh ingredients (they don’t even own a freezer!) and features craft beer, coffee from local roasters at Bold Bean, and Puck’s small batch sugar cane sodas.
Let’s start with the pizza courses.
Trasca makes their dough fresh every day using the secret family recipe that’s been passed down for generations. Each pie is topped with housemade pizza sauce, cheese, and fresh toppings like basil, fontanini pepperoni and sausage, and fresh veggies. We tried slices of Classic Margherita, Pepperoni, and Supreme pizzas.
Up next is four rounds of Paninos.
What’s a panino? Pizza dough is rolled out super thin, generously sprinkled with cheese and hot toppings, and baked. Once the panino comes out of the oven, remaining toppings are added and the whole thing gets rolled together burrito style. The Spaghetti Pie Panino – spaghetti, meatballs, and mozzarella smothered in housemade marinara sauce and garnished with Parmigiano Reggiano – was a group favorite. Honorable mentions (in order of my preference) include Chicken Bacon Ranch, The Guac, and Cuban Connection Paninos.
We finished off the night with Mud Pie.
Trasca & Co’s famous dessert is a family recipe passed down for generations. An Oreo cookie crust is filled with Dulce de Leche and Christy’s Dream vanilla ice cream and topped with Grandma T’s hot fudge and espresso whipped cream. The perfect ending to an already delicious meal.
Trasca & Co Eatery is open daily in Ponte Vedra Beach. If you want my suggestion for what to order: half a spaghetti pie panino with a salad, black cherry soda, and split a piece of mud pie (or don’t) with your dining mates. Happy eating!
